Asian Lettuce Wraps
If you know you need to eat lettuce but don’t necessarily like salads, this meal is a great option for you! This also works well for people who need low-carb options. I got this recipe from my father-in-law.

Ingredients
For the Wraps
- 2 TBS olive oil
- 2 lbs lean ground turkey
- 2 tsp minced garlic in water
- 1 medium onion, diced
- 3 TBS low sodium soy sauce
- 1/4 cup hoisin sauce
- 2 TBS rice wine vinegar
- 2 tsp grated ginger (optional - I use squeeze ginger because it is more convenient)
- 1 can water chestnuts, diced
- Salt and pepper
- Large red leaf lettuce or romaine lettuce leaves
- Optional toppings: cashews, shredded carrots, green onion, crunchy chow mein noodles
For the Hoisin Asian Glaze
- 1/4 cup hoisin sauce
- 1 TBS chili garlic paste
- 2 TBS low sodium soy sauce
- 1 TBS honey
Method
- Cook the Turkey: In a frying pan over medium heat, add the ground turkey and 1 TBS olive oil. Cook until browned and drain excess fat. Place the turkey aside in another dish.
- Sauté the Aromatics: Next, add 1 TBS olive oil, garlic, and onion to the pan and cook until the onions are soft.
- Combine and Simmer: Put the turkey back in the pan and add the hoisin sauce, soy sauce, rice wine vinegar, and ginger. Mix well. Add the water chestnuts and salt and pepper. Simmer on low heat for 2-3 minutes.
- Make the Glaze: For the glaze, in a small bowl whisk together the hoisin sauce, chili garlic paste, soy sauce, and honey.
- Assemble and Serve: Place the turkey mixture on 1-2 large lettuce leaves. Top with your favorite toppings and drizzle the glaze over. Wrap the leaves around the fillings and eat like a wrap or burrito, with the leaves acting as the tortilla. (If that is too messy, try cutting up the lettuce and eating it as more of a salad.)
