CHickpea Pasta with Pesto and Peas
Ok- this is a super simple pasta dish that you can use as a main meal with a veggie side (it contains protein from the chickpeas, making it more satiating than normal pasta), or as a side dish to a meal with meat (e.g. salmon or chicken on the grill). You can throw it together in 15 mins or less.
Serves: 4
Time: 15 mins
Ingredients
- 8 oz box chickpea pasta
- 3/4 of a small jar of pesto
- 8 oz frozen peas
Method
- Boil Water: Boil water in a large saucepan or pot on the stovetop.
- Cook the Pasta: Add the chickpea pasta and cook for about 7 mins (careful not to cook too long or it will get mushy).
- Prep the Peas: While the pasta is cooking, heat up the frozen peas in the microwave according to package instructions.
- Combine and Serve: Drain water from the pan and toss the pasta with the pesto and peas. Serve!
