Have-it-your-way Stroganoff

This is a family recipe that I’ve played with and modified over the years. You can make it with whatever ingredients you prefer for your taste and diet needs - regular ingredients and healthy substitutes are both listed. If you need lower fat or less red meat, substitute ground turkey. If you want a gut boost for healthy probiotics, use plain Greek yogurt instead of sour cream. If you want more fiber, use brown rice. If you need a low-carb meal or want more veggies, serve on top of cauliflower rice.

Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1-2 TBS olive oil
  • 1 tsp garlic salt (or 1-2 tsp minced garlic in water)
  • 1 onion, diced
  • 4-6 oz mushrooms, diced (white or baby Bella)
  • 1 can cream of mushroom soup + 1 can of water
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 or 2 bay leaves
  • 3/4 cup sour cream (or plain low-fat or whole milk Greek yogurt)
  • 12 oz egg noodles, cooked (or 2-3 cups cooked brown or white rice, or cauliflower rice)

Method

  1. Sauté the Veggies: Dice the onions and mushrooms. Heat the olive oil in a pan, then add the garlic (if using) and cook for 30 seconds. Add the onions and mushrooms and cook until soft and tender. Season with garlic salt while cooking, if minced garlic was not used. Set the veggies aside in a bowl.
  2. Cook the Meat: Cook the ground beef (or turkey) in the same pan until fully browned. Drain the grease.
  3. Simmer the Sauce: Put the onions and mushrooms back in the pan with the meat. Add 1 can of cream of mushroom soup, then a can of water plus the basil, salt, pepper, and bay leaves. Stir and simmer until thick. Then remove the bay leaves.
  4. Finish and Serve: Off the heat, add the sour cream (or Greek yogurt) and stir until well combined. Serve over your noodles or rice of choice.
