Honey Garlic Shrimp
Switch up your seafood night with this quick and healthy recipe. This recipe is based off of Sally’s Baking Addiction recipe titled “20 minute Honey Garlic Shrimp.” Serve with brown rice and a side of quick microwaved fresh broccoli for a balanced meal (see quick veggie sides page for broccoli recipe). You can prepare the shrimp and marinate it in the fridge the morning before to speed things up even more.
Serves: 4
Time: 20-30 mins
Ingredients
- 1/3 cup honey
- 1/4 cup soy sauce
- 2 tsp minced garlic in water
- 1 tsp ginger paste (optional)
- 1 lb medium uncooked shrimp, peeled and deveined (can be frozen)
- 2 tsp olive oil
- 2 green onions, diced (optional)
Method
- Prep the Shrimp: If the shrimp is frozen, place in a strainer and run under cool water for about 5-10 mins.
- Make the Marinade: Mix the marinade by whisking together the honey, soy sauce, garlic and ginger (if using) together in a bowl.
- Marinate: Place the thawed shrimp in a large ziploc bag and pour half of the marinade in. Close the bag and shake until well mixed. Allow to marinate for about 15 mins, or for up to 8-12 hours.
- Cook the Shrimp: Heat the olive oil in a large skillet or frying pan over medium-high heat. Drain the marinade from the shrimp and place the shrimp in the pan. Cook for a few minutes on each side, until the shrimp is pink. Pour the remaining marinade on top and cook for a few minutes more, until the sauce is thickened and the shrimp is fully cooked.
- Serve: Serve on top of brown rice with green onion on top, if desired. Add a side of steamed broccoli for a balanced, healthy meal!
