Kodiak Cakes Oatmeal Cokies

Ok, these cookies aren’t necessarily healthy, but we all need a good treat every once in a while! They do have oatmeal in them and the Kodiak cakes mix is made with whole grain flour and protein powder, which is good. This recipe is based off of the Kodiak “Secret” Oatmeal Chocolate Chip Cookies recipe from Kodiakcakes.com

Yield: 2 dozen
Time: 15 mins prep, 11 mins cook time


Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 1/4 cups Kodiak Cakes Flapjack and Waffle Mix
  • 3/4 cups rolled oats
  • 3/4 cup chocolate chips

Method

  1. Preheat and Prep: Preheat the oven to 350°F and prepare two baking sheets with silicone baking mats or parchment paper.
  2. Cream Butter and Sugar: Use a hand mixer to beat the butter and brown sugar together until smooth.
  3. Add Wet Ingredients: Using the mixer, mix in the egg and vanilla until smooth.
  4. Add Dry Ingredients: Add the Kodiak cakes mix and the oats and beat again until a well-mixed dough forms.
  5. Stir in Chocolate Chips: Use a wooden spoon to stir in the chocolate chips.
  6. Scoop: Use a spoon to scoop 2-3 TBS of cookie dough and form into balls. Place the balls onto prepared baking sheets (12 per sheet).
  7. Bake: Bake each sheet, one at a time, for about 11 mins, or until the edges are set and golden brown.
