Mediterranean Bowls

These bowls are so versatile - you can add or take away toppings as you want. It is easy to please a crowd with so many options. This recipe was inspired by my friend Emma!

Ingredients

  • Pick a protein: Air fryer chicken shawarma or frozen falafel balls (Trader Joe's has a good brand)
  • Base: Quinoa is the best option, but you can also use rice
  • Sauce/dressing: Hummus or tzatziki
  • Toppings:
    • Roasted chickpeas (optional - see recipe. Need 1 can chickpeas, olive oil, salt and cumin)
    • Black or green olives
    • Diced tomatoes
    • Diced cucumber
    • Feta cheese (optional)

Method

  1. Cook the Base: Begin boiling water to cook quinoa or rice. Cook according to package directions.
  2. Make Your Protein: See my Air fryer chicken shawarma recipe or heat up falafel balls according to package instructions.
  3. Roast the Chickpeas (Optional): If using roasted chickpeas, preheat oven or air fryer to 400°F. Rinse the can of chickpeas and dry in a tea towel or paper towels. Roll chickpeas in olive oil, salt, and cumin. Roast for about 20 mins in the oven, or 8-9 mins in the air fryer.
  4. Prep the Toppings: Cut veggies, open cans.
  5. Assemble and Serve: Assemble bowls with quinoa or rice at the bottom and protein, sauce, and toppings added according to your preference!
