Parmesan-Crusted Tilapia

Do you hate the taste of seafood but know it’s good for you? Or do you love it and just need a new recipe to spice up seafood night? Look no further! This tilapia is crunchy, tasty and so easy to make. Pair it with a frozen veggie you can quickly heat up or an easy veggie side dish from my vegetable sides page. I personally love to eat it with a baked sweet potato and/or salad!

Ingredients

  • 4 frozen tilapia fillets
  • Olive oil
  • 1/4 cup grated parmesan cheese
  • 1/4 cup Italian bread crumbs (or use regular bread crumbs and add about 1-2 tsp Italian seasoning)

Method

  1. Prep the Oven: Preheat the oven to 425°F. Line a baking sheet with foil.
  2. Make the Breading: In a shallow bowl or plate that you can fit a tilapia fillet in, mix the parmesan cheese and Italian bread crumbs together.
  3. Oil the Fish: With a cooking brush, brush olive oil on both sides of each tilapia fillet.
  4. Coat the Fillets: Coat each fillet with the cheese/bread crumb mixture by placing the fillet in the bowl and then flipping over. Use your hands to push the breadcrumbs on until they stick. Place the coated fillets on the prepared baking sheet.
  5. Bake: Place the fillets in the oven and cook for 15-20 minutes, or until the fish reaches an internal temperature of 165°F.
