Spinach ANd Pasta
Spinach is such a powerhouse of a food, but isn’t always fun to eat raw. Instead, add it to your pasta dish! This recipe is my twist on a family favorite recipe I got from my mom, and is super quick to make.

Ingredients
- 1 (10oz) package frozen spinach (or one 16 oz bag fresh spinach)
- 1/3 cup olive oil
- 1 1/2 TBS crushed basil
- 1 tsp minced garlic in water (or 1 clove garlic, minced)
- 1/2 tsp salt
- 1/2 cup grated parmesan cheese
- 1/2 cup milk
- 6-8 oz rotini noodles of your choice (e.g. whole wheat, vegetable, egg noodles, etc.)
Method
- Cook the Pasta: Prepare pasta according to the directions on the package.
- Prep the Spinach: Thaw the frozen spinach in the microwave and press out any excess liquid.
- Sauté Aromatics: Heat the olive oil in a pan with the basil and garlic.
- Add Spinach: Add the spinach and salt, and stir. (Note: If using fresh spinach, allow about 5 minutes to cook down the spinach until wilted.)
- Make the Sauce: Stir in the cheese and milk. Cook and stir over low heat for about 5 minutes.
- Combine and Serve: Spoon the spinach mixture over the cooked, drained noodles. Toss until well blended. Serve!
