3 Ingredient Peanut Butter CUps
We all love sweets and there is definitely a time and a place to enjoy any treat you want to 100% guilt free! But there are times when you want to eat a sweet treat without feeling like you’ve just filled up on junk. Or maybe you are wanting to lose weight or need to reduce sugar intake to improve your health or to help manage a disease. This is where healthy treat options can come in handy! My sister introduced me to these 3 ingredient peanut butter cups which are easy to make and delicious! Using natural peanut butter eliminates harmful hydrogenated oils and excessive added sugars. And using dark chocolate is healthier for you due to its higher iron and antioxidant content.
Serves: 8-12
Time: 20 mins prep, 30 mins chill time
Ingredients
- 1 1/2 cups dark chocolate chips
- 6 tablespoons coconut oil (divided)
- 1 cup creamy all natural peanut butter
Method
- Prep the Pan: Line a mini muffin pan with 24 mini paper liners (or just place liners on a baking sheet if you don’t have a mini muffin pan).
- Melt the Chocolate: Place the chocolate chips in a microwave-safe bowl. Microwave for 30 seconds; stir. Add 3 tablespoons of coconut oil and microwave for 30 more seconds. Stir until completely blended. If the chocolate chips aren’t completely melted, microwave for additional 15-second increments.
- Form the Chocolate Shells: Into each mini paper liner, spoon about 1 tsp of melted chocolate. Use the spoon to push the chocolate up the sides of the paper liner. Place the pan in the freezer for 5 minutes or until the chocolate is set.
- Prep the Peanut Butter: While the pan is in the freezer, melt the remaining 3 tablespoons of coconut oil and stir into the peanut butter (I have also made it without adding coconut oil to the peanut butter and it turns out fine).
- Assemble: Remove the muffin pan from the freezer. Divide the peanut butter between the chocolate shells. Then drizzle the remaining chocolate on top (if the chocolate has hardened, microwave for 15 seconds and stir).
- Chill and Store: Freeze the muffin pan for 30 minutes. Remove from the freezer and store in the refrigerator. Whenever you want one just grab one out of the fridge and enjoy!
