Sausage, CHeese and HasH Breakfast Casserole
My husband and I work out regularly in the mornings before our kids get up, which means we usually need a high-protein breakfast to refuel and recover after our strength or cardio sessions. This recipe is absolutely loaded with protein (and even has a few veggies too) and will help you recover and feel satiated after a hard workout! It is also high in fat though, so it is not heart-healthy. It takes about an hour to bake, so make it ahead of time and keep it in the fridge- then cut out a square and heat it up for breakfast! I often eat it for lunch too because it makes such good leftovers. This recipe is based off of a sausage casserole recipe on Allrecipes.com

Ingredients
- 1 lb sage flavored breakfast sausage (or plant-based sausage alternative)
- 3 cups frozen shredded hashbrowns
- 1/4 cup butter, melted
- 12 oz shredded mild cheddar cheese
- 1/2 cup onion, small diced
- 1/2 cup fresh (or frozen) diced bell pepper
- 16 oz container small curd low fat cottage cheese
- 8-9 large eggs
Method
- Preheat and Prep: Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
- Cook the Sausage: Brown the sausage in a skillet and drain the fat.
- Prep the Base: Melt the butter then mix with the hashbrowns in the 9x13 baking dish. Line the bottom of the dish with the hashbrowns.
- Mix and Pour: Combine all other ingredients (sausage, cheddar cheese, onion, bell pepper, cottage cheese, and eggs) in a large bowl - stir until well combined. Then pour into the 9x13 inch pan over the hashbrowns.
- Bake: Bake for 50 mins-1 hour in the oven, or until a toothpick in the center of the casserole comes out clean.
