Air Fryer Veggie Hash
This is one of my all-time favorite breakfasts. Eating vegetables for breakfast can help you feel satiated and nourished for the day! If you don’t have an air fryer, you can try roasting the veggies in an oven at 425°F - it will likely take 35-40 mins. This recipe is inspired by the Savory Sweet Potato Hash Recipe on p. 23 of Katie Hale’s Mediterranean Air Fryer Cookbook.
Ingredients
- 2 medium sweet potatoes, peeled and cut into 1/4-1/2 inch pieces
- 1/2 green bell pepper, diced
- 1/2 onion, diced
- 4 ounces mushrooms, diced
- 2 tablespoons olive oil
- 1 teaspoon minced garlic in water
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
Serve with:
- 2 fried eggs
- Low-sugar Ketchup (optional)
Method
- Prep the Veggies: Toss all ingredients together in a large bowl until the vegetables are well coated.
- Prep the Air Fryer: Pour the veggies into the air fryer basket (or onto an air fryer roasting pan), spreading them so vegetables are in a single layer. You may need to do 2 batches.
- Cook: Cook for 9 mins at 380°F then stir. Cook for another 9 mins, or until the vegetables are tender and browning on the edges.
- Serve: While the hash is cooking, make the fried eggs. Serve with the fried eggs.
