Protein Waffles
I love waffles, but store-bought waffle mixes are often made with white flour and too much sugar. These waffles are much better! What makes them so great? They’re made with whole food ingredients and are a great source of fiber and protein, which help you feel more full and satisfied. They are also gluten free for all of those who need a good GF breakfast! This recipe was given to me by my friend Amy.
Serves: 4
Time: 20-30 mins
Ingredients
- 2 cups cottage cheese
- 6 eggs
- 2 cups gf rolled oats
- 1 tsp vanilla extract
Method
- Blend: Add ingredients to a high-speed blender in the order listed. Blend on high for 1-2 mins.
- Rest: Let the mixture sit in the blender for 10 mins after blending to thicken.
- Cook: Heat the waffle iron and spray with cooking spray to prevent sticking. Pour the mixture into the waffle iron and cook until done.
- Serve: Serve with your favorite toppings! Try breaded chicken bites (in the air fryer for a quick but crunchy topping) and maple syrup for some extra protein or try peaches, berries, or bananas with whipped cream to get in one or two of your daily fruit servings.
