Beef Chow Mein Noodles
I love this simple, Asian-style dish! Although ground beef is not the healthiest protein option out there, it is still a great protein to include when placed in a balanced, healthy diet. Recommendations are to limit your red meat consumption to 3 portions per week. Using ground beef in this recipe rather than strips of steak cuts down on prep and cooking time, which is always a win! This recipe is inspired by the beef chow mein noodles recipe on the Centr app.

Ingredients
- 10-12 oz fresh chow mein noodles*
- 1-2 TBS sesame oil
- 12-16 oz lean ground beef
- 2 tsp garlic in water
- 2 tsp ginger paste or fresh grated ginger
- 8 oz sugar snap peas
- 1/2 red bell pepper, sliced thin
- 1/4 cup oyster sauce
- 1 TBS rice wine vinegar
- 2 TBS soy sauce
- 1 scallion, finely sliced (optional)
(Note: You can find fresh chow mein noodles in the refrigerated sections of some grocery stores)
Method
- Cook the Noodles: Cook the chow mein noodles in a microwave-safe bowl according to the instructions on the package (usually in about 2 cups of water for about 2 mins in the microwave).
- Cook the Beef: Cook the ground beef in a large non-stick skillet. While the beef is cooking, slice the bell pepper and scallion.
- Drain the Beef: Once the ground beef is fully browned, drain the grease and take the beef out of the skillet and put it in a container to be used again later in the recipe.
- Sauté Aromatics & Veggies: Heat the sesame oil in the skillet, then add the ginger and garlic and cook for 30 seconds, until fragrant. Then add the bell pepper and snap peas and cook for about 5-7 minutes, or until tender.
- Combine: Add the beef, noodles, and remaining ingredients (except for the scallion) into the pan and mix until everything is well coated and heated.
- Garnish and Serve: Sprinkle the scallion on top and serve.
