Tofu and Broccoli

Do you love to order beef and broccoli at Asian restaurants? Then you will love this plant-based twist on that classic dish. This is my absolute favorite way to eat tofu! It’s so flavorful you won’t even mind the tofu. This is based off a similar recipe on reciperunner.com

Ingredients

For the Tofu and Broccoli

  • 1 (14 oz) block extra-firm tofu
  • 3 cups broccoli florets (or two medium-large heads of broccoli, cut into bite-size pieces)
  • ~2 TBS olive oil, divided
  • 2 tsp soy sauce
  • 2 tsp cornstarch
  • Salt and pepper
  • Brown rice (or your choice of rice) for serving

For the Teriyaki Sauce

  • 3 TBS soy sauce
  • 3 TBS water
  • 3 TBS maple syrup or honey
  • 2 TBS rice vinegar
  • 1/2 tsp sriracha sauce
  • 1 tsp ginger paste (or 1/2 tsp ground ginger)
  • 1 tsp minced garlic in water (or 1/2 tsp garlic powder)
  • 2 tsp cornstarch + 2 tsp water

Method

  1. Press the Tofu: Cut the tofu along the thick edge into 3 thin slabs. Lay them in a single layer on a tea towel, then wrap the towel over top and place something heavy on top so that the liquid drains from the tofu and gets absorbed into the towel. Let drain for 15-20 mins.
  2. Prep the Oven: Preheat oven to 400°F and spray a baking sheet with cooking oil.
  3. Season the Tofu: Once drained, cut the tofu into small cubes. Place cubes into a medium bowl and toss with 2 tsp olive oil, 2 tsp soy sauce, and 2 tsp cornstarch. Salt and pepper to taste. Dump the contents of the bowl onto one half of the baking sheet.
  4. Season the Broccoli: Add the broccoli to the bowl and toss with 1 TBS olive oil, salt, and pepper until coated. Dump the broccoli out onto the other half of the pan.
  5. Bake: Bake for about 25 mins, stirring halfway through cooking time. The tofu should be firm and golden and the broccoli soft and browned.
  6. Make the Sauce: While the tofu and broccoli are baking, make the teriyaki sauce. Add all ingredients, except the cornstarch and water, into a medium saucepan and heat on the stove until boiling. Once boiling, mix together the 2 tsp cornstarch and 2 tsp water with a whisk and add it to the pot. Turn down the heat to low and let the sauce simmer until thick.
  7. Combine and Serve: Once the tofu and broccoli are done, pour them back into the bowl and pour the teriyaki sauce on top. Mix well. Serve over rice.
