Black Bean and Pepper Breakfast Scramble
This is a recipe of my own creation! I love getting in a few extra veggies in at breakfast whenever I can, for the vitamins, minerals and fiber. Starting the day out with a high-protein and high fiber breakfast helps you feel satiated and have energy to make it through the morning's work. You can also wrap these eggs in tortillas for a mexican-style breakfast burrito.

Ingredients
- 1/2 TBS butter or olive oil
- 1/2 red or green bell pepper, diced
- 3 TBS salsa
- 1/3 cup black beans
- 4 eggs
- 2 TBS shredded cheddar cheese (optional)
- 2 large tortillas
Method
- Sauté the Pepper: Melt the butter in a frying pan on medium/high heat. Add the bell pepper and sauté until soft and slightly browned, about 5-7 mins.
- Scramble the Eggs: Add the salsa and black beans and stir. Then immediately add the 4 eggs and stir and cook frequently, until the eggs are scrambled and cooked well.
- Assemble and Serve: Put the egg mixture into the tortillas and sprinkle cheese on top. Roll up the tortillas and serve!
