Chicken Fajitas
Another tasty, nutritious and quick go-to recipe of mine is chicken fajitas. Whether you have fresh or frozen chicken, this recipe can be made in 30 mins or less.

Ingredients
- 2 TBS oil (e.g. canola, vegetable oil)
- 2 chicken breasts
- 1 large bell pepper (red or green), sliced into thin strips
- 1 large onion, sliced into thin strips
- 1 package fajita seasoning
- Water
- Tortillas
- Optional toppings: Cheese/salsa/sour cream/guacamole cups
Method
- Thaw the Chicken: If using frozen chicken breasts, first begin thawing them in the microwave on defrost mode for about 9-10 mins.
- Prep the Veggies: While the chicken breasts are thawing, slice the onions and peppers.
- Sauté the Veggies: Pour 1 TBS oil into a frying pan and heat. Then add the peppers and onion and cook until soft and the onion is translucent. Transfer into a bowl.
- Prep and Cook the Chicken: While the peppers and onions are cooking, cut the chicken into strips. Once the peppers and onions are out of the pan, add the other TBS of oil and cook the chicken until done.
- Season and Combine: Add the fajita seasoning and water (according to seasoning package instructions) to the pan, as well as the peppers and onions, and cook until everything is coated in seasonings and the sauce is thick.
- Serve: Serve in tortillas with desired toppings.
