Curried Cauliflower
Curried cauliflower is an awesome side-dish for Indian-inspired dishes, such as chickpea or chicken tikka masala, butter chicken, etc. It does take some time to cook in the oven, but prep time is quick and you can shorten the time by cooking it in an air fryer if you have one. This recipe is inspired by a similar recipe called “Curry Roasted Cauliflower” on healthyseasonalrecipes.com.

Ingredients
- 1 head of cauliflower
- 1 TBS + 1 tsp olive oil
- 1 1/2 tsp curry powder
- 1 tsp salt
- 2 tsp lemon juice
Method
- Preheat Oven: Preheat the oven to 425°F.
- Prep the Cauliflower: Cut off the leaves and core of the cauliflower, then cut the cauliflower into bite-size pieces.
- Season: Place the cauliflower in a large bowl and add the olive oil, curry powder, and salt. Toss and stir until the cauliflower is evenly coated.
- Prepare for Baking: Spread the cauliflower out onto a large baking sheet in an even layer. Keep the bowl to the side to use after cooking.
- Bake: Bake the cauliflower for about 10 mins, then stir and cook another 7 mins, or until the cauliflower is tender and beginning to brown on the edges. You can turn on the broiler for an additional 2-3 mins once the cauliflower is tender if you would like to crisp them up a bit.
- Finish and Serve: Pour the cauliflower back into the large bowl and add the lemon juice. Stir and serve!
