Easy Chickpea Tikka Masala

This plant-based meal is super tasty, fast and nutritious. You need a tikka masala simmer sauce from a grocery store (my favorite is Trader Joe’s sauce), a can of chickpeas, an onion, coconut oil, and rice or naan bread. That’s it!

Time: 15 mins


Ingredients

  • Coconut oil or vegetable oil
  • 1 small/medium onion, diced
  • 1 can chickpeas
  • 1 pouch of Tikka masala simmer sauce
  • Rice and/or naan bread for serving

Method

  1. Sauté the Onion: Chop the onion. Heat enough oil in a frying pan on the stove to coat the bottom of the pan. Add the onion and cook for about 7 mins, or until the onion is translucent, stirring frequently.
  2. Prep the Chickpeas: Meanwhile, dump the can of chickpeas into a strainer and rinse under water until all bubbles are gone.
  3. Simmer: Add the chickpeas and simmer sauce to the pan and stir until heated through.
  4. Serve: Serve on rice and/or naan bread and enjoy!
