Healthy 7 Layer Dip
If you’ve been asked to bring a side dish to a party or potluck or are hosting a get-together, this is such a delicious, healthy option. Greek yogurt, olives and avocados in the guacamole provide healthy fats. The beans, cheese, Greek yogurt provide quality protein. And the beans, tomatoes, green onions and jalapeños provide some great fiber. Serve with your favorite chips! This recipe is based off of a similar recipe on ambitiouskitchen.com.

Ingredients
- 1 (15 oz) can refried beans (low fat or vegetarian, if desired)
- 2 cups plain whole-fat Greek yogurt
- 1 (1 oz) packet taco seasoning
- 2 cups store-bought guacamole or homemade guacamole*
- 1/2 cup shredded cheddar or Mexican cheese
- 1 1/2 cups quartered cherry tomatoes
- 1-2 cans sliced black olives
- 2 green onions, diced
- 1/2 cup chopped cilantro (optional)
- 1-2 jalapeños, sliced (optional)
(Note: See method step 3 if making homemade guacamole)
Method
- Spread the Beans: In a 9x9 or 9x13 inch glass baking dish, spread the refried beans in an even layer at the bottom.
- Mix the Yogurt Layer: In a medium bowl, mix together the Greek yogurt and taco seasoning. Then spread the mixture on top of the refried beans.
- Add the Guacamole: If using store-bought guacamole, spread immediately on top of the Greek yogurt mixture. If making your own guacamole: in another bowl, prepare the guacamole by mashing 2 large avocados with a fork until smooth. Then stir in 2-3 TBS chopped cilantro, 1 seeded and diced jalapeño, 1 TBS lime juice, and salt and pepper to taste. Then spread over the yogurt mixture.
- Layer the Toppings: Layer the rest of the ingredients on top in this order: shredded cheese, tomatoes, olives, green onion, cilantro, and jalapeño slices.
- Serve: Enjoy with your favorite chips!
