Sausage and Veggies Sheet Pan Meal

My sister created and shared this recipe with me! I love it because you can change it to use whatever vegetables you have around. It’s a really yummy way to get more veggies into your diet. It is a low-carb dinner on its own but you can add a roll or a side of rice or potatoes if you need some carbs.

Serves: 4
Time: 10 mins prep, 35-40 mins cook time


Ingredients

  • 1 horseshoe sausage
  • 1 large or 2 small green bell peppers
  • 1 large or 2 small zucchini or yellow squash
  • 1 large yellow onion
  • 1/2 lb baby carrots
  • Olive oil
  • Garlic powder
  • Salt and pepper or lemon pepper

Method

  1. Prep the Oven: Heat oven to 425°F.
  2. Prep the Veggies: Dice all vegetables, then toss them with olive oil (1-2 TBS) in a large bowl until vegetables are evenly coated.
  3. Season: Pour vegetables out on a large baking sheet. Sprinkle vegetables with garlic powder and lemon pepper (or salt and pepper), to taste.
  4. Roast and Finish: Roast veggies in the oven for about 20 minutes, stirring occasionally. Meanwhile, slice sausage into thin medallions. Add sausage to the pan and cook another 15-20 minutes, or until sausage is heated through.
