Sautéed Asparagus
Asparagus is particularly delicious when sautéed in olive oil and served alongside fish and potatoes. They are simple to make too!

Ingredients
- 1 bunch asparagus
- 1.5 TBS olive oil
- Salt and pepper to taste
- 1 tsp lemon juice (optional)
Method
- Prep the Asparagus: Wash the asparagus and then cut off the bottom 1-2 inches of the asparagus, which is too tough to chew, and discard. Then cut the remaining asparagus stalks in half.
- Sauté: Heat the olive oil in a medium frying pan on medium-high heat. Once the olive oil is heated, add the asparagus and stir. Then cover with a lid and reduce the heat to medium. Continue to cook, stirring every couple of minutes until the asparagus begins to wilt, about 6-8 mins. Then add salt and pepper to taste, and cook another 2-3 mins until the asparagus is very tender.
- Finish and Serve: Turn off the heat and, if desired, add the lemon juice and stir. Serve!
