Steel Cut Oats with PB and Banana
Steel cut oats are an excellent choice for breakfast! They are very filling and full of whole-grain goodness. Sweeten it a bit with maple syrup and bananas, add some peanut butter for an extra bit of protein and sprinkle on flaxseed meal for an omega-3 boost. Choose quick cooking oats for a faster cook time, or leave the regular ones cooking while you get ready for the day, then come back to a warm breakfast! I’ve provided the recipe for one serving of oats according to the instructions on my package of oats but always follow the instructions on your own bag! You can also try adding a bit of yogurt and peaches instead of bananas and peanut butter for another fun flavor.

Ingredients
- 1/4 cup steel cut oats (or see package for serving size for your brand of oats)
- Pinch of salt
- 2 tsp maple syrup
- 1.5 TBS crunchy peanut butter
- 2 tsp ground flaxseed meal (optional)
- 1/2 banana, sliced
Method
- Cook the Oats: Cook the oats in water with salt in a sauce pan. Note that regular steel cut oats take about 15-20 mins to cook, but there are quick cooking oats that take a shorter time if you’d rather not wait!
- Assemble and Serve: Once the oats are fully cooked and the water is absorbed, put the oats into a personal bowl for serving. Add the maple syrup and stir until well-mixed. Then sprinkle the flaxseed meal (if using) on top and drizzle the peanut butter over top. Then add the sliced bananas. Enjoy!
