Banana Bread
This bread is simple and quick to make! If you need a somewhat healthy dessert and have a couple of over-ripe bananas sitting around, this recipe is for you! Add walnuts instead of chocolate chips to make it even more nutritious. This recipe is inspired by a similar recipe on www.simplyrecipes.com

Ingredients
- 2 large over-ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 1/2 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1/2 cup all purpose flour
- 1/2 cup chocolate chips or walnuts (optional)
Method
- Preheat and Prep: Preheat the oven to 350°F. Grease a 4x8-inch loaf pan.
- Mash the Bananas: In a medium bowl, mash the bananas with a fork until smooth. (Keep the fork handy to beat the egg in step 5).
- Melt and Mix the Butter: Melt the butter in the microwave in a small bowl. (Keep the bowl handy until step 5). Stir the butter in with the bananas.
- Add Baking Soda and Salt: Stir in the baking soda and salt.
- Prep the Egg: Crack the egg into the small bowl you melted the butter in. Use the fork to beat the egg.
- Combine Wet Ingredients: Stir the sugar, beaten egg, and vanilla extract into the banana mixture.
- Add Dry Ingredients: Stir in both kinds of flour. If using, fold in the chocolate chips or walnuts.
- Bake: Pour the batter into the greased pan and bake for 50 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
- Cool and Serve: Let cool on a wire rack for a few minutes, then remove from the tin and let it cool further before serving.
