Strawberry Chia Seed Pudding

Ever tried chia seeds before? Chia seeds are absolutely packed with awesome nutrients, including fiber, omega-3 fatty acids (ALA), calcium, phosphorus, manganese, magnesium, iron, antioxidants and protein. They can be tricky to know how to eat though, especially because you need to soak them before eating them to be able to digest and absorb their nutrients better. If you’re looking for a way to add chia seed into your diet, look no further! This is my all-time favorite healthy treat! This recipe was inspired by a similar recipe on the Centr app.

Serves: 5
Time: 5 mins prep, then let sit for 4+ hrs before serving


Ingredients

  • 2 cups fresh strawberries
  • 1 1/2 cups whole milk
  • 3/4 cup plain Greek yogurt (low-fat or full fat)
  • 3 tsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup chia seeds
  • Mini chocolate chips or other chocolate pieces (optional)

Method

  1. Blend: Blend all ingredients except for the chia seeds and chocolate chips in a blender at low speed until smooth.
  2. Mix in Chia Seeds: Pour the mixture into a large bowl and whisk through the chia seeds.
  3. Chill: Refrigerate for 4 hours or overnight, stirring occasionally or right before serving. The chia seeds will gelatinize and make the mixture pudding-like.
  4. Serve: When ready to eat, scoop the pudding into cups or bowls and top with mini chocolate chips, if desired.
  5. Store: The pudding will last up to 5 days in the fridge.
