Easy Baked Sweet Potatoes
Sweet potatoes make a wonderful side dish for a rotisserie chicken, parmesan-crusted tilapia or salmon. There are two methods to making them- in the oven or microwave. If you have the time, oven-baked potatoes taste extra amazing and are so worth it. If you’re short on time, use the microwave instead.
Serves: Any number you choose
Time: 1.5-2 hours (oven) or 10 mins (microwave)

- Sweet potatoes
- Butter, for serving
- Salt and pepper, for serving
Method
Oven Method
- Preheat Oven: Preheat the oven to 350°F.
- Prep the Potatoes: Wash off the sweet potatoes then poke several times with a fork to allow steam to escape while cooking.
- Bake: Place in the oven on the middle rack and cook for 1.5-2 hours. Note: put a baking sheet covered in foil on the rack right beneath the potatoes to catch any sugars that seep out during cooking.
- Serve: Pull out the potatoes and let cool a few mins before serving. The skin will be tough but the insides will be very soft. Cut open the potatoes, scoop out the innards and mash with a fork. Add butter, salt, and pepper on top.
Microwave Method
- Prep the Potatoes: Wash off the sweet potatoes then poke several times with a fork to allow steam to escape while cooking.
- Microwave: Place the potatoes on a microwave-safe plate and microwave on high for 10 mins, flipping halfway through cooking. Note: if the potatoes are very big/thick it will take longer to cook. If they are small, you may only need 8 mins or so to cook.
- Serve: Let the potatoes cool for a few minutes before serving. Cut open, scoop out the innards and top with butter, salt, and pepper.
