Sautéed Zucchini and Yellow Squash
This simple side dish goes perfectly alongside a sandwich (see my Salmon Reuben Sandwich recipe) or with grilled chicken or a fish dish. You just use zucchini, just yellow squash or use both.

Time: 10-15 mins
Ingredients
- 1 large or 2 small zucchini
- 1 large or 2 small yellow squash
- Olive oil
- Salt and pepper
Method
- Prep the Veggies: Cut the zucchini and squash lengthways down the middle so you have 2 halves. Then cut each piece into thin semi-circle slices.
- Heat the Oil: Heat 1-2 TBS olive oil in a medium-large non-stick pan on medium-high heat, so that the bottom of the pan is thinly coated with oil.
- Sauté: Add the zucchini and squash, stir, then cover with a lid. Remove the lid to stir every 2 mins, then replace the lid. After about 6-8 mins, when the veggies are turning translucent, grind some salt and pepper on, to taste. Then cook another 2 mins.
- Serve: Serve alongside your dinner dish!
