Sautéed Zucchini and Yellow Squash

This simple side dish goes perfectly alongside a sandwich (see my Salmon Reuben Sandwich recipe) or with grilled chicken or a fish dish. You just use zucchini, just yellow squash or use both.

Serves: 4
Time: 10-15 mins


Ingredients

  • 1 large or 2 small zucchini
  • 1 large or 2 small yellow squash
  • Olive oil
  • Salt and pepper

Method

  1. Prep the Veggies: Cut the zucchini and squash lengthways down the middle so you have 2 halves. Then cut each piece into thin semi-circle slices.
  2. Heat the Oil: Heat 1-2 TBS olive oil in a medium-large non-stick pan on medium-high heat, so that the bottom of the pan is thinly coated with oil.
  3. Sauté: Add the zucchini and squash, stir, then cover with a lid. Remove the lid to stir every 2 mins, then replace the lid. After about 6-8 mins, when the veggies are turning translucent, grind some salt and pepper on, to taste. Then cook another 2 mins.
  4. Serve: Serve alongside your dinner dish!
